It’s grilling season which this mama loves! One less step I have to take in the meal prep because I’m able to pass it off to the Grill Master (aka my hubby!) This recipe was one that my mom started making and it quickly became a favorite – isn’t anything a favorite that your mom makes?! My mom has always been an incredible cook! This recipe takes very little prep, but it doesn’t taste like an “easy” recipe. It’s so fresh and perfect for this time of year! My girls love salmon and were begging for more! Let’s get to it!
What you will need:
Fresh Atlantic Salmon
Olive oil
Lime Butter Sauce:
(Makes about 3/4 cup; Prep time: 5 minutes)
1 large garlic clove, chopped
1/4 cup fresh lime juice
1 teaspoon salt
1/2 teaspoon black pepper
1 stick (1/2 cup) unsalted butter, melted
Directions:
1. Prepare salmon – Quickly rinse under cold water, skin salmon (if needed), cut into fillets (if needed), salt & pepper & place fillets on greased aluminum foil about an inch apart from each other.
2. Place foil directly on grill; direct medium heat for 10-12 minutes or until internal temperature is 145 degrees.
3. Prepare lime butter sauce: Puree garlic with lime juice, salt and pepper in a blender until smooth (I use my Nutribullet!). Add melted butter and blend until emulsified, about 30 seconds.
4. Top salmon with lime butter sauce and serve with rice and a fresh veggie or sides of your choice.
