We had so much fun making homemade pop tarts and they turned out amazing! My girls ask for pop tarts every time they see them at the store and I’m always saying no to the “fun” foods, so we decided to make them from scratch and it was definitely worth the time and effort! They were so delicious and fun that I thought I would share the recipe!
Pastry:
2 cups all-purpose flour
1 Tablespoon sugar (I used cane sugar)
1 teaspoon salt
1 cup (2 sticks) butter, cut into pats
1 large egg
2 Tablespoons milk
1 additional egg for brushing on pastry
Filling:
Jam of your choice! We used blueberry, strawberry & cherry!
The possibilities are endless! You can do jam, chocolate chips, marshmallows, nutella, etc!
Frosting:
Powdered sugar
Milk
Step 1: Make the dough
Whisk together flour, sugar and salt. Work in the butter with your fingers or pastry blender. I just used my fingers until the butter was about pea-sized lumps and until the mixture holds together when you squeeze it. In a small bowl, whisk the egg and milk together. Add to the flour mixture and mix just until the egg mixture is blended in. It should pull all the dough together to easily form a ball for rolling out.
Step 2: Assemble the tarts
Lightly flour a work surface and roll out dough until about 1/8″ thick. We used a heart cutout for Valentines Day, but you can certainly do regular pop tarts and form nine 3″ x 4″ rectangles. Beat the additional egg and brush over the “inside” of the tart. The egg helps the top layer to sick to the bottom. Place a heaping spoonful of filling in the center, leaving 1/2-inch space around it. Place second layer on top and press around the edges. Using a fork, press the tines around the edges to seal. Poke holes with fork in the top of the tarts to allow steam to escape. Place tarts on airbake sheet and chill in refrigerator for 30 minutes while oven is preheating. Bake at 350* for 12-15 minutes or until golden.
Step 3: Frosting
Allow tarts to cool. Measure 1 1/2 cups of powdered sugar in small bowl. Whisk in milk little by little and continue to mix until you get the consistency you like. Spoon frosting over each tart and add sprinkles if desired! Enjoy!!
