I’m not even sure you can call this a “recipe” because it is just so easy! I love this meal because it is simple, healthy and perfect for this time of year! Let’s get to it!
1 lb pork tenderloin
3 medium sweet potatoes
3 anjou pears
3 apples
Olive oil
Cinnamon
Nutmeg
This is as easy as it looks! Preheat oven to 375* and spray or coat baking tray with olive oil. I purchased a peppercorn seasoned pork tenderloin so no additional work required on seasoning the meat. Place pork tenderloin on baking tray. Chop sweet potatoes, pears and apples and place on baking sheet. Season potatoes and fruit with cinnamon and nutmeg. Bake for 35-40 minutes, turning over potatoes, pears and apples about halfway through bake time.
*Recommended internal temp between 145-160 degrees
Serves: 4-5
Serve with wild rice or a side of your choice! Enjoy!
